Day 26– Today I am giving up recommended diet breakfasts and going back to my basic smoothie recipe. This smoothie has a banana, a scoop of whey protein powder, flax seeds, 1/2 cup of yogurt, 1 cup of coconut milk or almond milk and 1/2 c of frozen blueberries. This time I added celery. I don’t know why, it just seemed like the right thing to do. Of course, since I like leftovers I made a double batch and filled the rest of the room in the blender with ice. Of course, as soon as I poured my glass, I realized that I had actually made three servings. I was fine with that because this one was actually delicious. The picture doesn’t show it well, but it really is a beautiful shade of pink.
I had a teenie, tiny snack before lunch. Look at it! Isn’t it beautiful? There is something to be said about attractive food. Our brains naturally want bright beautiful colors because our brains are searching for a wide variety of nutrients.
For lunch I made a grilled cheese with roast beef. I found some lunch meats at Trader Joe’s which had no added sugar. I had a side of those wonderful Rainier cherries. Dinner was late tonight because I had a late meeting. In hindsight, I could have had an earlier dinner. Regardless, I thought since it was late, I’d just have a light dinner, but that didn’t work out either. We cooked up some mini-tacos, also from Trader Joes, I made a basic guacamole, but when that didn’t cut it I sat down with my old friend, an apple and peanut butter. So yes, by now I am seeing a couple of things I am doing wrong. 1) I’m eating too late. 2) I am having fruit with every meal. Hmm. Maybe I need to make a change…
Day 27 — Today I am going to knock out an hour-long yoga practice that I’ve been eyeballing. Thank you, Yoga With Adrienne. I was worried, because as I’ve said before I am not big on long workouts. This was actually a very pleasurable workout. I’m a big fan of yoga. My knee is killing me, but I’m soldiering on. I have a follow-up appointment on Friday.
Breakfast was easy smoothie leftover.
For lunch I had my deluxe popcorn, cherries, and this time a hard-boiled egg.
Wait until you get a load of my new favorite dessert. It’s ice cream made with 2 Tablespoons of peanut butter and 2 frozen bananas. Another recipe I found says you can use up to four bananas and two Tablespoons of peanut butter. I added a teaspoon of cocoa powder and voila! Chocolate ice cream with no sugar. Yes, I made the picture enormous because I feel like I should have been eating this and lettuce wraps the whole time. I don’t know that I’ll give this one up even after the end of this month. This is just too good of a find.
This is the equivalent of two scoops and thanks to the peanut butter, one scoop is enough. This is the recipe you have been waiting for!
Or maybe you wanted to see this one in action. For dinner, I decided to attempt the make at home Detox Pho that I linked to at the beginning of this blog. If you’re not in the mood to go searching that far back, it was found at Epicurious. I didn’t have kale, but I had romaine lettuce, which I didn’t cook into the soup, I just served as a garnish. If you were like us and had a hard time finding fish sauce or bean sprouts, you can find these easily at your local Asian market. Grocery stores in the States don’t serve bean sprouts or alfalfa sprouts much anymore because of the salmonella scare, so if you are like me and like to much on these raw, be wary. Here it is, in all it’s glory. Home-made Pho! To the side you see our garnishes: romaine, sprouts, onion, jalepeño, a mint leaf and julienned carrots. (I cut mysef pretty badly, while trying to cut the carrots but I guess that’s the price of home cooking.) I added some Aminos, rather than soy sauce to my individual bowl, but it needed nothing else. Perfection!
As things are wrapping up, I do plan to incorporate sugar back into my life after these 30 days. However, I am planning to take some of the recipes I have discovered into my life going forward; this pho, the no added sugar ice cream and the lettuce wraps.
